Pav Bhaji
Pav Bhaji is a fast food dish from India. It consists of a thick vegetable curry served with a soft bread roll. Vegetables in the curry may include potatoes, onions, capsicums, carrots, chillies, peas and tomatoes. Its origins are in the state of Maharashtra.
Ingredients :
- 4-5 Raw Potato (Cut in to cubes)
- 3 medium size Tomato (Finely chopped)
- 2 medium size onion (Finely chopped)
- 2 Capsicum (Finely chopped)
- 2 Carrot (grated)
- 3-4 Green Chillies (chopped)
- ½ tsp of Jeera
- 1 tsp of Kasuri Methi
- 1 tsp of Red Chilli powder
- 1 tsp of Ginger - Garlic paste
- 1 tsp of chopped Coriander leaves
- 3 tsp Pav Bhaji Masala
- 2 tsp of Lemon Juice
- Salt as per taste
- Refined Oil for cooking
- Butter (as required)
- A pinch of Red or Orange edible colour (Optional)

Procedure :
1. Heat 2 to 3 tsp of Oil in pressure cooker on medium flame. Add Jeera and chopped green Chillies. Add 1 tsp Pav Bhaji Masala and add tomatoes immediately. Mix it well.
2. Now add Potato cubes, chopped Capsicum and grated Carrot. Put ½ tsp of salt in it, mix properly. Add 1 cup of water and cover the lid. Take 2 whistle on high flame, then reduce the flame and cook for 5 min. After 5 to 6 min switch off the flame.
3. Now heat 2 to 3 tsp of oil in a heavy bottom pan and add 2 tablespoon of butter in it. When the butter is completely melted, then add finely chopped onion in it. Fry well for 2 to 3 minutes. Now add ginger garlic paste. Mix 1 tsp of Kasuri Methi by rubbing it on the palm.
4. After that add 1 tsp of Red Chilli powder, 2 tsp of Pav Bhaji Masala, ½ tsp of salt, 1 tsp of chopped Coriander leaves, a pinch of Red colour and 1 cup of water in it. Mix everything properly.
5. Now add cooked veggies in this, and start mashing it from the masher or ladle. You can add more butter into it. Add ½ cup of water to make thick consistency for the gravy. Cook for a minute and at last add 2 tsp of Lemon juice in it. Garnish it with butter and coriander leaves. Hot and spicy Bhaji is ready to serve with Pav.
•Note :- Heat a pan or a Tawa, add 2 tsp of butter and ½ tsp of bhaji. Roast the pav in this mixture before serving.
