Veg-Galouti-Kebab

Veg Galouti Kebabs are pure veg variant of Mughal cuisine non-veg Galouti Kebabs. The key ingredients are mainly Beans, Soya, Potatoes, Cottage Cheese with various other Indian spices. It is usually served with all kinds of Indian breads.

Ingredients :

  • 1 cup Kidney Beans or राजमा (Overnight soaked)
  • ½ cup Soya Chunks
  • 1 large Onion (Sliced and fried)
  • 1 cup dry roasted Gram flour (बेसन )
  • 2-3 tsp of Coriander leaves (हरी धनिया)
  • 2 tsp of Mint leaves (पुदीना)
  • 2-3 Green Chillies
  • 1 tsp of Garlic paste (लहसुन)
  • 1 tsp of Ginger paste (अदरख)
  • 1 tsp of Lemon juice
  • 1 tsp of Rose Water (गुलाब जल)
  • 1 tsp of Kevda Water
  • 1 tsp of Red Chilli Powder
  • 1 tsp of Salt or According to taste
  • 1 tsp of Desi Ghee or Butter
  • 1 tsp of Fresh Cream
  • Refined Oil for Cooking.

[Other Dry Ingredients]

  • 2 tsp of Anise (सौंफ)
  • 1 tsp of Cumin (जीरा)
  • 4-5 Green Cardamom (हरी इलाइची)
  • 2 Black Cardamom (काली इलाइची)
  • 5-6 Cloves (लौंग)
  • 10-12 Cashew (काजू)
  • 8-10 Black Pepper (काली मिर्च)
  • 1 flower of Mace (जावित्री)

* Grind all the dry Ingredients to make a fine powder.

Procedure :

1. After soaking the rajma overnight, wash it thoroughly and cook it in pressure cooker with ½ tsp of salt and 2-3 cups of water. Take 5 to 6 whistle and switch off the flame. Allow the pressure to release naturally.

2. Then strain it in a large strainer to remove water. Drain all the excess water. Let it cool down.

3. Now in another pan take 2-3 cups of water. Bring it to boil and then add soya chunks in it. Stir it for 2 to 3 min. Switch off the flame and cover a lid . After few minutes, wash it with water. Now squeeze all water from soya chunks.

4. In a large Mixer Grinder add Rajma, Soya chunks, fried Onions, Green Chillies, Ginger-Garlic paste, Lemon juice, Coriander & Mint leaves, Red Chilli Powder, Rose & Kevda water, 
½ cup of roasted Besan and Dry Ingredient powder. Add salt according to your taste. Grind all the ingredients to make a fine paste.

5. Take out this paste in a bowl. In case, if your paste is not thick enough to make kebab, then you can add 2 to 3 tsp of roasted Besan.

6. Now for more juicy taste, add 1 tsp of Desi Ghee or Butter and 1 tsp of fresh cream. Mix it well.

7. Grease your palm with oil. Now divide paste in to equal balls. Press one ball slightly to make a shape of tikki. Prepare all tikkis similarly.

8. Heat a frying pan, grease it with oil and shallow fry the kebab until lightly coloured from both the sides. Prepare all kebabs likewise.

9. Delicious and Juicy Veg Galouti Kebabs are ready. Serve with Green Chutney and Reshmi Paratha, Naan or Roti.
