Dhokla
Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is made with a fermented batter derived from gram flour. Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack.
Ingredients :
[For Batter]
• 1 cup Besan (Gram flour)
• 1 tsp of Ginger - Green Chilli paste
• 2 tsp of Refined Oil
• 2 tsp of Lemon juice
• ½ tsp of Baking Soda or ENO Fruit salt
• Salt to taste
[For Tempering (Tadka)]
• 1 tsp of Mustard seeds
• 2-3 Green Chillies (Cut in two halves)
• 1 tsp Sugar
• A pinch of Salt
• ½ Cup of Water
• 2 tsp of chopped Coriander leaves
• 2 tsp of Refined Oil
Procedure:
1. In a large mixing bowl add besan, ginger-chilli paste, 2 tsp of oil, 2 tsp of lemon juice and salt according to taste (½ tsp approx.).
2. Now start adding water to make a smooth batter. Cover this for 20 min.
3. Meanwhile, keep water in the steamer to heat up.
4. After 20 min add ½ tsp of baking soda or ENO fruit salt and start mixing it in one direction with light hands.
5. Now immediately pour this batter into greased tin and keep the tin in steamer on medium flame for 10 to 15 min.
6. After 15 min check the dhokla by inserting a knife or toothpick. If your toothpick comes out clean, it means dhokla is ready. If not then leave it in steamer for 5 min more.
7. Then take out your tin and demold it. Cut dhokla into pieces.
8. Now in a pan add 2 tsp of oil. Then add mustard seeds into it. Wait until mustard seeds crackles. Now add green chilli and saute them. Add half cup of water, 1 tsp of sugar and a pinch of salt. Let it boil for few seconds.
10. Now pour it on dhokla. Garnish it with coriander leaves. Instant dhokla is now ready.
11. Serve with Green Chutney or Tamarind Chutney.
