Mix-Vegetable-Kofta

Mix Vegetable Kofta is an exotic Indian gravy dish made with mixed vegetable dumplings dipped in onion-tomato based gravy. Koftas are small round or oval-shaped dumplings, with minced vegetables, bread crumbs, etc. as well as light spices that are deep-fried.

Ingredients :

[For Kofta]

  • 5-6 Potatoes (Boiled & Grated)
  • 1 cup of finely chopped Carrot
  • 1 cup of finely chopped Capsicum
  • 2-3 Green Chillies (Chopped)
  • ½ cup of Bread Crumbs
  • ½ cup of Plain flour (मैदा)
  • 1 tsp of finely chopped Ginger
  • 1 tsp of finely chopped Garlic
  • 1 tsp of Chaat Masala
  • ½ tsp of Turmeric powder
  • 1 tsp of Cumin powder
  • 1 tsp of Red Chilli powder
  • 2-3 tsp of Coriander leaves (Chopped)
  • ½ tsp of Salt

[For Gravy]

  • 1 large Onion (Sliced)
  • 4-5 clove of Garlic
  • Ginger (1 Inch piece)
  • 8-10 Cashew (काजू)
  • ½ cup of Yogurt (दही)
  • 1 full cup of Tomato Puree
  • ½ tsp of Cumin (जीरा)
  • 4-5 Clove (लौंग)
  • 1 stick of Cinnamon (दालचीनी)
  • 2-3 Green Cardamom (इलाइची)
  • 1 tsp of Garam Masala
  • ½ tsp of Turmeric Powder
  • 1 tsp of Coriander Powder (धनिया)
  • 1 tsp of Red Chilli Powder
  • Salt to taste
  • Oil for Frying
  • 1 or 2 tsp of Coriander Leaves for Garnishing

Procedure :

To make Kofta ]

1. In a bowl put boiled and grated Potato, add chopped Carrot, chopped Capsicum, chopped Ginger & Garlic, green Chilli. Mix it well.

2. Now add Red Chilli powder, Haldi, Jeera powder, Chaat Masala, ½ cup of Bread Crumbs, ½ cup of Maida, coriander leaves and salt to taste.

3. Mix all the ingredients properly to make the dough. Now cut the dough into equal parts to make round balls.

Kofta-Balls
4. Heat the oil in a pan, put 3 to 4 balls and fry them on medium flame till golden brown. Similarly fry all the kofta balls. Keep them aside.

To make Gravy ]

1. Heat 2 tsp of oil in a pan on medium flame. Put sliced Onions and fry them till golden brown. Now add a piece of Ginger, 4 to 5 cloves of Garlic, 8-10 Kaju and saute it. Switch off the flame. Let it cool down. Then grind all the ingredients to make a fine paste.

2. Add yogurt (curd) to this paste and grind it again and mix everything well.

3. Now put 2 to 3 tsp of oil in a pan, heat it on medium flame. Add Cumin seeds, 4-5 Cloves, 2-3 green Cardamom and 1 stick of Cinnamon. Fry for 1 minute. 

4. Add Tomato Puree and Onion Yogurt paste in this. Mix everything properly. Now add Haldi powder, Red Chilli powder, Dhaniya powder, Garam masala and salt according to taste. Stir it till the oil starts separating from the spices.

5. Now add one or one and  a half cup of water. Let it boil for 2 to 3 min. Switch off the flame.

6. In a serving plate or bowl, place 4 to 5 Koftas and pour Gravy over them. Garnish it with Coriander leaves.

7. Soft and Tasty Mix Vegetable Koftas are  ready. You can have it with Roti, Paratha, Naan, Jeera Rice or Pulao.
