Sooji/Semolina Kachori
This is a very easy Indian Snack recipe made with semolina. Potato is used as the main stuffing in this recipe. It can be substituted with different stuffings of your choice like, mashed peas, dal masala or onion masala. These crispy Kachoris are quick and easy to prepare.
Ingredients:-
- 2 cup of Water
- 1 cup of Sooji/Semolina
- 1/2 tsp of Carom seeds
- 1/2 tsp of Salt
- 1 tsp of Oil
[For Filling]
- 4-5 Potato (Boiled & Grated)
- 1/2 tsp of Mustard seeds
- 1/2 tsp of Grated Ginger
- 2 green Chillies, chopped
- 1 Onion, finely chopped
- 1/2 tsp of Turmeric powder
- 1/4 tsp of Red Chilli powder
- 1/2 tsp of Garam Masala
- 1/2 tsp of Salt
- 1-2 tsp of Coriander leaves, chopped
- Oil for frying.
Procedure:-
1. Firstly to make filling, heat 2-3 tsp of oil in a pan. Now add 1/2 tsp of mustard seeds in this. When it starts crackling, add chopped green Chillies and Ginger.
2. Now add chopped onions and mix for a minute. Add grated potatoes, 1/2 tsp of Turmeric, 1/4 tsp of Red Chilli powder, 1/2 tsp of Garam Masala and 1/2 tsp of Salt. Mix everything properly and lastly add chopped Coriander leaves and keep this fiiling aside to cool down.
3. To make dough, add 2 cups of water in a pan on medium flame. Add 1 tsp of oil, 1/2 tsp of salt and 1/2 tsp of Carom seeds. When water comes to boil then add Sooji slowly and keep stirring continuously from another hand to avoid lumps.
4. Once sooji absorbs all the water, then transfer the dough in a bowl and cool slightly. To make it smooth and soft, knead it when its slightly warm.
5. Now grease your hands with oil, take a small ball size dough. Flatten it from the sides to make a cup. Take a tbsp of potato filling and keep it in centre. Seal it from all the sides and flatten slightly between palms.
6. Heat oil in a pan, fry all kachoris one by one on medium flame. Stir occasionally until golden brown and crispy.
7. Finally, Sooji/Semolina Kachori is ready to serve. Enjoy it with green chutney or tomato sauce.
