Balushahi
Balushahi is a traditional dessert originating from the Indian sub-continent. A popular sweet from the Indian subcontinent, balushahi is similar to a glazed doughnut in terms of ingredients, but differs in texture & taste. In South India, a similar pastry is known as Badushah.
Ingredients :
- 2 tsp Ghee
- 2 tsp Curd
- 1½ cup Maida (Plain Flour)
- 1 cup Sugar
- A pinch of Red or Orange Colour
- 3-4 Cashew nuts (Chopped)
- 3-4 Almonds (Chopped)
- 3-4 drops of Lemon
- Refined Oil or Ghee for frying
Procedure :
1. Take a pan, add sugar with half cup of water to make sugar syrup (Chashni).
2. Keep stirring until sugar melts properly. Now add a pinch of colour and 3-4 drops of lemon in to it.
3. Now check the syrup, it should be little sticky only, we don't need one or two strings type of chashni. Keep this aside.
4. Now take a bowl, add curd and ghee. Mix them properly with a fork or whisk until it becomes creamy.
5. Add maida and mix them gently. We don't have to knead the dough, just to bind maida lightly with the mixture. Make sure the dough is not too soft or too hard.
6. If dough gets hard & is not binding with the mixture then add a spoon of curd or ghee in to it. And if, the dough gets too soft then add 2-3 tsp of maida in to it.
7. Now cover this for about 20 minutes.
8. After 20 mintues, just knead the dough again with light hands and make small balls.
9. Keep one ball in your hand, press it lightly and make a hole in the centre with finger. Prepare all the balls like this.
10. Now heat oil or ghee in a pan or kadhai on low flame.
11. Put 4 to 5 balushahi in low hot oil. Let them fry on one side with low flame for 4 to 5 min.
12. Turn the side gently and fry them on medium flame until golden brown.
13. Now take them out and put directly in sugar syrup. Dip them for 2 to 3 min only.
14. Now take them in a plate, garnish with cashews and almonds and its ready to serve.
