Uttapam
Uttapam is a traditional dosa variety of the popular South Indian morning breakfast cuisine. Unlike typical dosa, it is thicker and with toppings. Rava Uttapam is an easy & instant recipe of the traditional South Indian Uttapam in which over-night batter fermentation is not required.
Ingredients :
- 1 cup of Semolina (Sooji / Rava)
- ½ cup of Curd
- ¼ tsp of Baking Soda
- ½ cup of Onion, finely chopped
- ½ cup of Tomatoes, finely chopped
- 2-3 Green Chillies, chopped
- ½ cup of Capsicum, finely chopped (Optional)
- ½ cup of grated Carrot (Optional)
- 2 tsp of chopped Coriander leaves
- Salt to taste.
- Oil to cook Uttapam.
Procedure :
1. In a large bowl take 1 cup of Rava / Semolina and ½ cup of Curd. Add salt to taste and mix it together.
2. Add water gradually to make a semi thick batter. Now cover a lid and give it a rest for about 20 min so that Rava absorbs water completely.
3. Meanwhile lets prepare the toppings for the Uttapam by taking 1 cup of chopped Onions, ½ cup of chopped Tomatoes, 2-3 chopped green Chillies and 2 tsp of Coriander leaves in a bowl.
4. Also add ½ cup of grated Carrot, ½ cup of chopped Capsicum and ½ tsp of Salt. Mix everything thoroughly.
5. Now check the consistency of the batter. It should be like dosa batter. Add some water if necessary. Also add ¼ tsp of Baking Soda to it and mix gently.
6. Heat pan on medium flame. Spread 2 tsp of oil. Pour Rava batter on pan. Spread 1-2 tsp of toppings on it and press lightly with ladle.
7. Pour 1 tsp oil around the Uttapam. Cook for a minute or until base is cooked well. Flip over and cook both side. Similarly make all the Uttapam.
8. Instant Rava Uttapam is ready. Serve it with Tomato Ketchup, Chilli Sauce or Coconut Chutney.
