Potato-Puri

Potato Puri is a perfect breakfast or dinner recipe with a twist to our regular puri, by adding some spices and boiled potatoes and making it special and super delicious in taste.

Ingredients :

[For Puris]

  • 2 cup of Wheat flour (Atta)
  • 3-4 Potatoes (Boiled & Grated)
  • 1 tsp of Cumin seeds
  • 1 tsp Turmeric Powder (Haldi)
  • 1 tsp of Red Chilli Powder
  • 1 tsp of Coriander Powder (Dhaniya)
  • 3 tsp of Cooking Oil
  • Salt to taste
  • ½ cup of Coriander leaves (Finely Chopped)
  • Refined Oil for frying

[For Tamatar Aloo ki Sabzi (Jhol)]

  • 4-5 large Boiled Potatoes (Cut into small cubes)
  • 1 cup of Chopped Tomatoes
  • 1 tsp of Cumin seeds
  • 3-4 Green Chillies (Chopped)
  • ½ tsp of Red Chilli powder
  • 1 tsp of Garam Masala
  • Salt to taste
  • 3-4 tsp of Refined Oil
  • 2 tsp of Coriander leaves (Finely chopped)

Procedure :

[ To Make Puris ]

1. In a bowl, add 2 cups of Wheat flour and boiled, grated Potatoes.

2. Now add Cumin seeds, Red Chilli powder, Turmeric powder, Coriander powder, 3 tsp of refined oil, Coriander leaves and salt according to taste.

3. Mix all the ingredients well by hand. Using a little water, knead to make a soft dough. 

4. Cover with a lid and set aside for 10 to 15 minutes.

5. Heat Refined oil in a pan on medium flame. After 15 min, make small balls from dough.

6. Take a ball and roll it on a rolling board to make puri. Now gently put the puri in hot oil. Fry until golden brown and crispy on low to medium flame. Make all puris similarly.

7. Crispy and delicious Potato Puris are ready. It will taste best with Tamatar Aloo ki Sabzi (Jhol). Or you can have them with various vegetables or with ketchup.

[ To Make Tamatar Aloo ki Sabzi (Jhol) ]

1. In a large pan, heat 3-4 tsp of oil on medium flame.

2. Now put Cumin seeds, when it starts crackling, add chopped Green Chillies and Tomatoes. Add Salt to taste, Red Chilli powder and half a cup of water. 

3. Cover the lid and let it cook for 3 to 4 min on low flame.

4. After 3-4 min, open the lid, add Garam Masala. Now put boiled Potato cubes and mix properly with spices.

5. Add 2 cups of water and bring it to boil for 5 to 6 min on medium flame. After 6 or 7 min, switch off the flame. Transfer it in a serving bowl and garnish with Coriander leaves.

6. Tasty and Spicy Tamatar Aloo ki sabzi (Jhol) is ready. Serve with Potato Puri, Stuffed Parathas, Pulao and various dishes.
