Gajar Ka Halwa
Hello Friends!!! Wish you all a Very Happy New Year. Lets start this new year with a famous Indian Dessert i.e. Gajar Ka Halwa (Carrot Pudding). It is made by placing grated carrots in a pot containing a specific amount of milk and sugar, cardamom and then cooking while stirring regularly.
Ingredients:-
- 1 kg Grated Gajar (Carrot)
- 1 L Full Cream Milk (Raw)
- 400 gm Sugar
- 1/2 tsp of Cardamom powder
- 15-20 Raisins / Kishmish
- 15-20 Chironji
- 10-12 Almonds/Badam (chopped)
- 10-12 Cashew/Kaju (chopped)
- 3-4 tbsp of Ghee.
=》(If you want, you can first fry cashews and almonds in ghee.)
Procedure:-
1. Firstly, peel the carrots, wash it and grate it. Now keep it aside.
2. In a heavy bottom kadhai, add 1 lit of raw milk and grated carrot on high flame. When it comes to boil, keep stirring.
3. Continue to boil until the carrots are cooked well and milk get reduced.
4. When the milk reduces completely, reduce the flame and add 400 gm sugar in it. Mix well and cook until the sugar dissolves and thickens.
5. Now add cashew, almonds, raisins, chironji and ghee. Cook until the halwa thickens and ghee releases from sides.
6. Now turn off the flame, let the halwa cool down slightly, then add Cardamom powder and mix everything properly.
7. Serve it in a bowl, garnish it with some more cashew and almonds. Enjoy your halwa as chilled or warm.
